Mushroom Mochi

Ingredients:

- 1 cup glutinous rice flour (also known as sweet rice flour)

- 1/2 cup water

- 1/4 cup sugar

- 1/2 cup finely chopped mushrooms (such as shiitake or cremini)

- 1 tablespoon soy sauce

- 1 tablespoon sesame oil

- 1 tablespoon cornstarch (for dusting)

- Additional sesame oil for brushing (optional)

- Additional soy sauce for dipping (optional)

Instructions:

1. Prepare the Mushroom Filling:

- In a small skillet, heat 1 tablespoon of sesame oil over medium heat. Add the finely chopped mushrooms and sauté until they are cooked through and any liquid has evaporated, about 5-7 minutes.

- Stir in the soy sauce and cook for an additional 1-2 minutes to allow the flavors to meld. Remove from heat and set aside to cool.

2. Make the Mochi Dough:

- In a microwave-safe bowl, combine the glutinous rice flour, water, and sugar. Mix until well combined.

- Microwave the mixture on high for 1 minute. Remove from the microwave and stir well. Microwave for an additional 30 seconds to 1 minute, or until the mixture is thickened and slightly translucent.

- Carefully remove the bowl from the microwave (it will be hot). Stir the mixture vigorously until it becomes smooth and elastic. If the dough is too sticky, you can add a little more glutinous rice flour.

3. Assemble the Mushroom Mochi:

- Dust a clean work surface with cornstarch. Transfer the mochi dough onto the dusted surface.

- Divide the dough into small portions, about 1 tablespoon each. Flatten each portion into a circle with your fingers.

- Place a small amount of the cooled mushroom filling in the center of each mochi circle.

- Gently pinch the edges of the mochi circle together to enclose the filling, shaping it into a ball. Roll the filled mochi ball between your palms to smooth it out.

4. Cook the Mushroom Mochi:

- Heat a non-stick skillet or pan over medium heat. Brush the surface of the pan with a little sesame oil, if desired.

- Place the filled mochi balls in the skillet, leaving some space between them. Cook for 2-3 minutes on each side, or until the mochi is lightly golden and slightly puffed.

- Remove the cooked mushroom mochi from the skillet and let them cool slightly before serving.

5. Serve and Enjoy:

- Serve the Mushroom Mochi warm as a delightful savory snack or appetizer. Optionally, you can serve them with a side of soy sauce for dipping.
